Ingredients  
¼ cup olive oil
½ cup chopped onion
1¼ pounds lemon-garlic marinated pork tenderloin, cut into ½-inch-thick slices
1 can (15 ounces) chickpeas, rinsed and drained
1 can (15 ounces) Italian-seasoned tomato sauce
½ teaspoon salt
15 ounces (15 cups) baby spinach
2 tablespoons lemon juice

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion. Cook, stirring occasionally, until fragrant, about 2 minutes. Scrape the onion to the side.
  2. Add the pork. Cook, turning once, until browned on both sides, about 4 minutes.
  3. Add the chickpeas, tomato sauce, and salt. Stir and bring to a moderate simmer. Cover and cook for 5 minutes
  4. Add the spinach, a large handful at a time, covering the pan between additions. Cook until all the spinach wilts, about 3 minutes total.
  5. Add the lemon juice to the chickpea mixture and stir to combine. Divide the chickpea mixture evenly among six plates and top with the pork.
