Choose from chicken, pork or go meatless. The sweet potatoes and Spanish flavors are terrific together.

 

Ingredients  
garbanzo or navy beans, rinsed and drained 2 cans (15 oz each)
frozen spinach 1 pkg (10 oz)
pork tenderloin or skinless, 
boneless, chicken breast (optional)
1 lb.
chicken broth, 1/3 less sodium 2 cans (14 1/2 oz each)
water 1 cup
diced tomatoes, no salt added 1 can (14 1/2 oz)
sweet potato (peeled and cubed) 1 lg (18 oz)
onion, chopped 1 lg
red or yellow bell pepper, seeded and chopped 1
paprika 2 tsp
ground cumin 2 tsp
ground cinnamon 1/4 tsp
dried basil 1 tsp
salt (optional) 1/4 tsp
fresh ground pepper 8 grinds
cayenne (optional) 8 dashes

Directions

5 to 11 hours before serving:

  • Add ingredients to slow-cooker.
  • Cover and cook on low 10 to 11 hours or on high 5 to 6 hours, until beans are tender.

Note: Add 1 to 2 tsp sugar to smooth flavors, if desired.
